Lemon Bars (Keto - Low Carb)
Little slice of lemon delight. These are seriously really good and guilt free.
It took a while to find this mixture for the perfect Keto lemon bar, but I believe this is the right recipe.
According to one of our friends who tried these bars “you are trying to sabotag my diet” these can’t be Keto. 😀
My husband could hardly stop eating them and the best part is we didn’t gain weight. Some of the other Keto treats I made seemed to cause weight loss stalls.
I truly believe that these are worth making if you are looking for a delicious lemon bar recipe that you can eat on a Ketogenic diet.
INGREDIENTS
Crust
- 1 1/4 C. Almond Flour
- 1/3 C. Swerve (Granular)
- 1/4 tsp salt
- 1/4 C. Butter, chilled and cut into small pieces
Lemon Filling
- 4 Large Eggs
- 1/2 C. Swerve (Granular)
- 2/3 C. Fresh Lemon Juice (approx. 4 Large Lemons)
- 2 Tbsp Lemon zest (off of the 4 Lemons used for the juice)
- 1/4 C. Almond Flour
For the crust, combine the almond flour, sweetener and salt into a food processor and pulse then add in the butter and pulse again until mixture is crumbly,press the mixture into the bottom of an 8×8 square baking dish. I lined my baking dish with parchment paper. Bake at 350 degrees for 15-20 minutes. Take out an let it cool.
Beat 4 Large eggs and Swerve until smooth with an electric hand mixer, add the lemon juice and the lemon zest. Fold in the Almond Flour. Pour over the crust and then bake at 350 degrees for approx. 20=30 minutes. Test filling with a toothpick, when it comes out clean the filling is done. Take out and let cool on a wire rack or granite counter top.
Refrigerate for an hour. Sprinkle with powdered swerve, then enjoy!!!!
